I made some Quinoa the other day and was thinking about how I was going to use it…a salad? like porridge for breakfast? Then SOUP came to mind. I made the soup then added the Quinoa when I served it since it was already cooked!!
1 Onion, chopped
1 Carrot, chopped
1/4 Cabbage, Chopped
1/2 cup Cauliflower, chopped
1TBSp Panch Phoran (an Idian Spice blend, don’t have it? Use Curry Powder)
1 tsp Coconut Oil
1 can Chickpeas, rinsed
1 Carton Chicken Broth, use Veg broth to make it Vegan
1 can Coconut Milk
2 cups of cooked Quinoa
Salt to taste
Saute veg, panch phoran in Coconut Oil, add broth, coconut milk and chickpeas.
Bring to a boil, then reduce heat and simmer covered for 1/2 an hour!!
Serve over Quinoa, as much or as little as you want!!
