VEGANUARY CONTINUES!!
30 Day Vegan Challenge Update!
So far so good!
PROS: I feel good, am very regular (TMI??), everything I have made is delicious and I don’t feel like I’m missing out.
CONS: Ordering in a restaurant, when you hold the eggs, cheese and bacon on your skillet and still pay full price. Cooking two meals, one for me and one for the rest of my family.
My husband is actually happy to eat Vegan with me here and there and my whole family ate vegetarian on Friday night!
Recipe: Chick Pea Salad (Like Tuna Salad but with Chick peas)
Drain and rinse a can of chick peas.
Put the chick peas in a bowl and mash. Add chopped celery, green onions and parsley. Add a heaping Tablespoon of Vegan Mayo and a teaspoon of Dijon Mustard, salt and pepper to taste. Mix well and serve on toast with lettuce.
