30 Day Vegan Challenge!!!
Yes folks, I’m hopping on the Vegan Band Wagon for the Month of January.
Why??
-I want to focus on something and thought that this would be challenging
-BONUS healthy eating!
-my sister recently went vegan and feels and looks great
So where did I start? I borrowed a couple of Vegan Cookbooks from a friend and have been looking thru those. I haven’t done a full vegan grocery shop yet, I have to stock up on nuts and legumes. But, I spent some time yesterday roasting butternut squash (seeds too), zucchini, onion, brussel sprouts and garlic and made a warm quinoa, lentil and roasted vegetable salad with fresh turmeric, ginger and a little lemon juice and olive oil. YUMMY! I had a green salad on the side.
I have the other half of my squash to make a coconut thai curry soup with tonight.
How do I feel so far? Good, but I was HUNGRY this morning!!
It definitely takes time to chop and prep, but worth it so far!!!
