Dr. Seuss Day has inspired me to make Green Eggs and Ham for dinner tonight! You can find lots of different recipes online, but this one is probably the easiest!!

Sarah’s Green Eggs and Ham

Ingredients

12 eggs

1 cup shredded cheese

1 cup steamed broccoli, chopped (could replace with frozen chopped spinach, liquid drained)

1 cup chopped ham (deli works or bacon works too)

Method

Preheat oven to 375 degrees

Oil a large rectangular baking dish (4 quart/or two smaller ones and split it)

In a large bowl whisk eggs, add cheese, broccoli and ham.

Pour into baking dish and bake uncovered for 30-45 min, or until cooked through. It will be slightly browned and puffed up.

Serve with toast!!
